Anarokrema (Cream made with Anari cheese)

Ingredients

  •  ½ kilo Chrysi Zymi Puff pastry for confectionery purposes (phyllo)
  •  A little bit of Olive Oil
  •  Charalambides Christis fresh anari (Talari) 400g.
  •  1 cup of Charalambides Christis fresh dairy Cream
  •  2 tablespoons of rosewater
  •  8 tablespoons of honey
  •  2 tablespoons of powdered sugar
  •  1 cup of walnuts (coarsely chopped)
  •  1 teaspoon of Cinnamon

Instructions

  1. Brush the pastry sheets with olive oil, put them little by little in a baking tray and bake them in the oven until they turn reddish-brown.
  2. After they turn reddish-brown, crush them in a bowl and set them aside.
  3. In a bowl, melt the anari very well and beat it together with the dairy cream using a whisk until the mixture is well blended and creamy enough without any excess liquid.
  4. Then add the honey, cinnamon, and powdered sugar and continue beating using the whisk.
  5. In a deep dish, place half the crushed pastry sheets (phyllo) on the bottom of the dish and continue with the anari mixture. Add the walnuts and continue the process until you have done all the layers and finally the remaining crushed sheets (phyllo) should be added on top.
  6. Finally, put it in the fridge for 4 hours and just before serving you add a drizzle of honey and some powdered sugar on top.
