Ingredients

  • 100g. dried chickpeas cooked until soft
  • 100g. bulgur
  • 200g. boiled water
  • 1 teaspoon lemon zest
  • 1 tablespoon dry mint
  • 1 teaspoon salt
  • ½ a teaspoon of pepper
  • 100g. pomegranate
  • 50g. raisins
  • 30g. pumpkin seeds
  • 30g. olive oil
  • 30g. Fresh lemon juice
  • 200g. Charalambides Christis Feta cut into cubes

Instructions

  1. Bake the chickpeas in plenty of boiling water until soft. Drain and leave to cool.
  2. In a bowl, add the bulgur, the boiling water, the lemon zest, the mint, the salt and the pepper and mix. Cover with plastic wrap and leave for 10 minutes. The bulgur will have absorbed all the water.
  3. To make the salad, put the chickpeas, the bulgur, the raisins, the pumpkin seeds, the olive oil and the lemon juice in a bowl. Mix well and pour the feta on top.
