Creamy caramelized onion rigatoni with Charalambides Christis margarine original.

Ingredients
- 2 large onions, thinly sliced
- 1 teaspoon fresh thyme
- 40 g. Charalambides Christis margarine Original (+20 g. for finishing)
- 250 g. rigatoni (half a package)
- 200 ml Charalambides Christis Dairy Cream with 35% fat
- 60 g Parmesan cheese, grated
- Salt and pepper
- Lemon zest
- Chives
Instructions
- Sauté the onions in the margarine with salt, pepper, and thyme. Cook on low heat, being patient to let them caramelize well.
- Cook the pasta in salted boiling water according to the package instructions, reserving 1 cup of the pasta water.
- Once the onions are ready, add the heavy cream and 3-4 tablespoons of the reserved pasta water to the pan, then transfer the mixture to a blender to create the sauce.
- Add the sauce back to a pan along with 20 g of margarine and the cooked pasta. Stir to warm through.
- Serve with grated parmesan, lemon zest, and freshly ground pepper. Garnish with chives if desired.
