Creamy caramelized onion rigatoni with Charalambides Christis margarine original.

Ingredients

  • 2 large onions, thinly sliced
  • 1 teaspoon fresh thyme
  • 40 g. Charalambides Christis margarine Original (+20 g. for finishing)
  • 250 g. rigatoni (half a package)
  • 200 ml Charalambides Christis Dairy Cream with 35% fat
  • 60 g Parmesan cheese, grated
  • Salt and pepper
  • Lemon zest
  • Chives

Instructions

  1. Sauté the onions in the margarine with salt, pepper, and thyme. Cook on low heat, being patient to let them caramelize well.
  2. Cook the pasta in salted boiling water according to the package instructions, reserving 1 cup of the pasta water.
  3. Once the onions are ready, add the heavy cream and 3-4 tablespoons of the reserved pasta water to the pan, then transfer the mixture to a blender to create the sauce.
  4. Add the sauce back to a pan along with 20 g of margarine and the cooked pasta. Stir to warm through.
  5. Serve with grated parmesan, lemon zest, and freshly ground pepper. Garnish with chives if desired.
