Truffled Penne Pasta | Charalambides Christis

A nice and delicious pasta combination which, of course, can be made with the use of only one pot!

Ingredients

  • 2 tablespoons of olive oil
  • 1 tablespoon of chopped onion
  • 400 g. chicken fillet cut into cubes
  • 200 g. mixed sliced mushrooms
  • 20 g. flour
  • 300 ml of water
  • 1 chicken stock cube
  • 250 g. penne pasta
  • 30 g. Charalambides Christis Vegetable Cream
  • 2 glasses of fresh spinach leaves
  • 30 g. grated parmesan
  • 1 tablespoon of truffle oil
  • Salt, Pepper

Instructions

  1. Heat the olive oil in a pot and fry the onion and garlic for a few seconds. Add the chicken and fry together for 1 more minute.  
  2. Add the flour, mix, and pour the water, broth, salt and pepper into the pot.
  3. Allow the mixture to boil vigorously. Pour the penne pasta and sour cream into the pot and cook over medium to high heat for 14 minutes.
  4. Remove the pan from the heat and stir in the spinach, parmesan, and truffle oil. Serve immediately.
