Green Wish in a Spoon – Pea Velouté Soup with Yoghurt & Bacon

Ingredients
• 500 g Barba Stathis Peas
• 1 leek (sliced)
• 1 potato (chopped)
• 1 garlic clove
• 700 ml vegetable broth
• 2 tbsp olive oil
• 100 g Straggato Yoghurt Authentic (10% fat) Charalambides Christis
• 1 tbsp lemon juice
• 3 slices bacon (cooked until crispy and crumbled)
• 1 tbsp pomegranate seeds (for garnish)
• Salt & pepper
Instructions
1. Sauté the leek and garlic in olive oil until soft and fragrant.
2. Add the potato, peas, broth, salt, and pepper.
3. Cook for about 20 minutes, then blend until smooth.
4. Stir in the yoghurt and lemon juice until fully incorporated.
5. Serve hot, topped with crispy bacon and pomegranate seeds.
