Potato Mozzarella Bomb!

Ingredients
- 400 g. baked potatoes
- 20 g. corn flour
- 150 g. Charalambides Christis Mozzarella Grated Cheese
- ½ tsp garlic powder
- ½ tsp sweet paprika
- Salt and pepper, to taste
For the garnish:
- 2 tbsp olive oil
- 1 tbsp parsley, chopped
- 100 g. Straggato Yoghurt Authentic Charalambides Christis
Instructions
- Peel the boiled potatoes and mash them well with a potato masher or a fork. Transfer to a mixing bowl.
- Add the cornflour, garlic powder, paprika, salt and pepper to the bowl with the potatoes. Mix well with your hands until fully combined.
- Shape the mixture into balls, approximately 40 grams each. Insert about 15 grams of grated mozzarella into the center of each ball, then close and shape the balls carefully to seal.
- In a hot pan, heat a little olive oil and cook the croquettes until golden brown on both sides.
- Sprinkle the croquettes with chopped parsley and serve alongside the strained yoghurt.
