Orzo in the oven with chicken and feta!

Ingredients
- 20 g. of Country life butter
- 400 g. chicken fillet cut into cubes
- 1 tablespoon of finely sliced onions
- 250 g. of Orzo
- 200 ml of white wine
- 1 package (400 gr.) of finely sliced tomatoes
- 400 ml water
- 1 teaspoon of vegetable stock powder
- 1 teaspoon of salt
- ½ teaspoon of pepper
- 2 teaspoons of sugar
- 1 teaspoon of oregano
- ½ teaspoon of mint
- 200 g. of Charalambides Christis feta, crumbled
Instructions
- Heat the butter in a saucepan and fry the chicken for a few minutes until it starts to lose its raw appearance. Put it aside until you need it.
- Put onion and orzo in the saucepan and fry for a few seconds, while stirring. Add the wine and stir over very high heat until the wine evaporates.
- In a bowl, mix the tomato, water, broth, salt, pepper, sugar, oregano, and mint and stir well.
- Preheat the oven to 200 degrees. Pour the fried orzo in a large pyrex and pour over the tomato and water mixture. Place the pyrex uncovered in the oven and bake for 40-45 minutes. Halfway through baking, take the pyrex out of the oven, add the chicken, and mix it well with the orzo. Put the pan back in the oven to finish baking.
- Remove the pyrex from the oven, stir and then spread the crumbled feta on top. Serve immediately.
