Orzo in the oven with chicken and feta!

Ingredients

 

  • 20 g. of Country life butter
  • 400 g. chicken fillet cut into cubes
  • 1 tablespoon of finely sliced onions
  • 250 g. of Orzo
  • 200 ml of white wine
  • 1 package (400 gr.) of finely sliced tomatoes
  • 400 ml water
  • 1 teaspoon of vegetable stock powder
  • 1 teaspoon of salt
  • ½ teaspoon of pepper
  • 2 teaspoons of sugar
  • 1 teaspoon of oregano
  • ½ teaspoon of mint
  • 200 g. of Charalambides Christis feta, crumbled

Instructions

  1. Heat the butter in a saucepan and fry the chicken for a few minutes until it starts to lose its raw appearance. Put it aside until you need it.
  2. Put onion and orzo in the saucepan and fry for a few seconds, while stirring. Add the wine and stir over very high heat until the wine evaporates.
  3. In a bowl, mix the tomato, water, broth, salt, pepper, sugar, oregano, and mint and stir well.
  4. Preheat the oven to 200 degrees. Pour the fried orzo in a large pyrex and pour over the tomato and water mixture. Place the pyrex uncovered in the oven and bake for 40-45 minutes. Halfway through baking, take the pyrex out of the oven, add the chicken, and mix it well with the orzo. Put the pan back in the oven to finish baking.
  5. Remove the pyrex from the oven, stir and then spread the crumbled feta on top. Serve immediately.
