Chicken Pie with Puff pastry for pies!

  • 400g. chicken thighs
  • 50g. of onion
  • 150g. of bacon
  • 1 sp chopped parsley
  • 1 sp Thyme
  • 1 tbsp paprika
  • 1 tbsp curry
  • 1 tbsp garlic powder
  • 2 sp olive oil
  • Salt
  • Pepper
  • 2-3 sp. olive oil
  • 1 pc fresh onion


  • 250ml Charalambides Christis Fresh Milk Full Fat, 3% Fat
  • 25g. unsalted butter
  • 25g. All-Purpose Flour
  • 50g. grated parmesan


  • 6 sheets of Chrysi Zymi Puff pastry for pies
  • Olive oil
  • White and Black Sesame
  • Salt
  • Thyme


  1. Firstly, marinate the chicken by adding salt, paprika, curry, garlic powder, and 2-3 spoons of olive oil, and mix well.
  2. In a pot, pour some oil and cook the chicken well. Finely chop the onion, bacon, and thyme and add them to the chicken.
  3. Take out the chicken and cut it into small pieces and transfer it back to the pot.
  4. Make the béchamel. Melt the butter in a saucepan, add the flour and mix, then add the milk, salt and pepper and stir until it thickens.
  5. Then, pour the béchamel into the mixture with the chicken, grate the parmesan and mix well, then add the parsley and fresh onion.
  6. In a 30cm diameter and 3-4cm height baking dish, brush some oil and place 3 pastry sheets of “Chrysi Zymi” for pies with some olive oil in between the sheets, add the stuffing and spread it slowly to cover the entire dish, then on top of the stuffing place the remaining 3 pastry sheets with some oil in between them.
  7. Cut away the excess pastry overhanging the dish.
  8. Finally, with a brush, spread the egg and on top of the pie sprinkle some sesame and thyme
  9. Bake in the oven at 180C for 30 minutes.
