Spanakopitakia Triangles!

  • 350g. of spinach
  • 1 pc fresh onion
  • 100g. feta cheese
  • 50g. cream cheese
  • 1 sp parsley
  • Zest from a lemon
  • 1 egg
  • 170g. leek
  • 2 sp Olive oil
  • 5-6 basil leaves
  • Salt
  • Pepper


  • 2 sheets of Chrysi Zymi Country Style Pastry
  • Olive oil


  • 200g. Charalambides Christis Dairy Cream
  • Juice of 1 lemon
  • Salt
  • Pepper


  1. Cut the leek and cook it in a pan with 2 spoons of olive oil and a little salt.
  2. When it softens, put it in a bowl with the fresh onion, parsley, and basil, and cut it into small pieces.
  3. Cook the spinach for a bit until it is wilted and add it to the bowl with the rest and mix well.
  4. Put them in a colander and press them to remove the excess liquid and place them in a bowl with the cream cheese, feta cheese, egg, lemon juice, salt and pepper.
  5. Mix well and refrigerate for 30 minutes for the stuffing to firm up.
  6. Take 2 country-style pastry sheets of “Chrysi Zymi”, place one on top of the other, and cut them in half.
  7. Brush the divided sheets one by one with the remaining juice from the cooked vegetables.
  8. Put 1 spoonful of stuffing and roll up the pastry sheet to create small triangles.
  9. Put them in the oven at 180C for 30 minutes.

Sauce: Mix the dairy cream well with the salt and pepper.
