Cheesecake with Melomakarona Base

Ingredients

For the base:

  • 600 g melomakarona (Greek Christmas honey cookies)

For the cream filling:

  • 910 g cream cheese
  • 300 g sugar
  • 2 tsp vanilla
  • 4 eggs
  • 120 g Charalambides Christis Dairy Cream with 35% fat  
  • 240 g Charalambides Christis Sour Cream
  • Zest of one lime

For the topping:

  • Blackberries

Instructions

  1. In a large bowl, add the cream cheese, sugar, and vanilla, and whisk until the mixture becomes fluffy and smooth.
  2. Add the eggs one at a time while whisking.
  3. Finally, add the lime zest, sour cream, and heavy cream, and mix until fully combined.
  4. Line a large baking pan with parchment paper, crumble the melomakarona, and press them down with the bottom of a glass to evenly cover the entire base of the pan.
  5. Pour the cream mixture over the melomakarona layer and spread evenly with a spatula.
  6. Bake in a preheated oven at 180°C for 20–25 minutes, or until the surface is lightly golden.
  7. Allow to cool slightly, remove from the pan, decorate with blackberries, slice, and enjoy!
