Cheesecake with Melomakarona Base

Ingredients
For the base:
- 600 g melomakarona (Greek Christmas honey cookies)
For the cream filling:
- 910 g cream cheese
- 300 g sugar
- 2 tsp vanilla
- 4 eggs
- 120 g Charalambides Christis Dairy Cream with 35% fat
- 240 g Charalambides Christis Sour Cream
- Zest of one lime
For the topping:
- Blackberries
Instructions
- In a large bowl, add the cream cheese, sugar, and vanilla, and whisk until the mixture becomes fluffy and smooth.
- Add the eggs one at a time while whisking.
- Finally, add the lime zest, sour cream, and heavy cream, and mix until fully combined.
- Line a large baking pan with parchment paper, crumble the melomakarona, and press them down with the bottom of a glass to evenly cover the entire base of the pan.
- Pour the cream mixture over the melomakarona layer and spread evenly with a spatula.
- Bake in a preheated oven at 180°C for 20–25 minutes, or until the surface is lightly golden.
- Allow to cool slightly, remove from the pan, decorate with blackberries, slice, and enjoy!
