Double-Stuffed Pizza with Tortilla Wrap and Charalambides Christis Halloumi

Ingredients

2 tortilla wraps

1/2 cup white sesame seeds

80 g mozzarella cheese

2 tbsp tomato sauce

2 tbsp olive oil (plus extra as needed)

1 egg

1/2 tsp oregano

60 g Charalambides Christis Halloumi (grated)

Parsley leaves for garnish

Salt and Pepper, to taste

 

Instructions

  1. Add the sesame seeds to a large plate.
  2. Brush a little olive oil over the entire surface of the tortilla and place it on the sesame seeds, pressing it to stick.
  3. Transfer to a frying pan (with the sesame side facing down), to which we have added a little olive oil and put on medium heat. Spread the tomato sauce, add the oregano, mozzarella, plenty of grated halloumi and cover with a second tortilla.
  4. Add a little more olive oil and turn, cooking both sides until golden brown and crispy.
  5. Remove to a cutting board, cut into quarters and transfer to a plate.
  6. In the same frying pan, add a little olive oil, put on medium to high heat and crack the egg.
  7. Grate plenty of halloumi and leave to caramelize and cook the egg. Place the egg in the middle of the pizza, season with salt and pepper and garnish with parsley.
