Christmas Tree Pancakes
Ingredients
For the pancakes:
• 1 large egg
• 386 g Charalambides Christis milk
• 300 g all-purpose flour
• 62 g sugar
• 4 g salt
• 12 g baking powder
• 1 g baking soda
• 21 g melted butter
• Red food colouring
• Green food colouring
For serving:
• 3 tbsp maple syrup
• Whipped cream
• 3 tbsp shredded coconut
• Coloured sprinkles
Instructions
1. In a medium bowl, whisk together the egg and milk until combined.
2. In a second bowl, mix the flour, sugar, salt, baking powder, and baking soda.
3. Add the wet ingredients to the dry ingredients and whisk until smooth. While whisking, add the melted butter.
4. Transfer half of the mixture to another bowl and colour one mixture red and the other green.
5. Heat a non-stick pan over medium heat and lightly grease it with oil or butter.
6. Cook the pancakes, starting with a large green one, then a slightly smaller red one, and continue alternating until forming the “tree” shape.
7. Serve with maple syrup, sprinkle shredded coconut around the tree, top with whipped cream, and finish with the coloured sprinkles.
