Croque Madame
Ingredients
For the béchamel:
80 g Charalambides Christis margarine Original
80 g flour
500 g Charalambides Christis Fresh Milk
1/3 tsp nutmeg
Salt
Pepper
For the rest:
1 brioche bun
2 tsp Charalambides Christis margarine Original
3 tbsp grated cheddar cheese
3 tbsp grated mozzarella
2 slices turkey or ham
1 egg
1 tomato
For serving:
Fresh thyme
Instructions
Melt the margarine in a medium pan over medium heat.
Add the flour and cook briefly until it forms a paste.
Gradually add the milk, whisking continuously. Once the sauce thickens, remove from heat, strain it, and add nutmeg, salt, and pepper.
Cut the brioche in half and spread margarine on both sides.
Add grated cheddar to both halves, then mozzarella and the ham. Place one half on top of the other to form a sandwich. Transfer to a baking tray lined with parchment paper, spread the béchamel over the top to cover the surface, and bake in a preheated oven at 180°C for 8–10 minutes.
At the same time, fry the egg and tomato in a pan with a little olive oil. Season with salt and pepper.
Remove the brioche from the oven and serve. Place the egg on top, add the tomatoes, garnish with fresh thyme, and enjoy.
