Oven Miracle – Pastitsio with Fresh Milk Béchamel & Parmesan

Ingredients

  • 500 g pastitsio pasta (long tubular pasta)
  • 400 g ground beef
  • 1 onion (finely chopped)
  • 1 carrot (grated)
  • 1 cup chopped tomatoes
  • 1 tbsp tomato paste
  • A pinch of cinnamon
  • A pinch of nutmeg
  • 1 tbsp basil
  • 500 ml Charalambides Christis Fresh Milk Full Fat, 3% Fat
  • 50 g Charalambides Christis margarine Original
  • 100 g flour
  • 100 g grated Parmesan cheese
  • 1 egg (optional, for richer texture)
  • Salt & pepper

Instructions

  1. In a large pan, sauté the ground beef with the grated carrot until browned.
  2. Add the chopped tomatoes, tomato paste, and spices/herbs. Simmer over low heat for about 25 minutes until the sauce thickens.
  3. Prepare the béchamel sauce: melt the margarine in a saucepan, add the flour, and whisk. Gradually pour in the milk, stirring constantly until smooth and thick.
  4. Stir in the Parmesan cheese (and the egg, if using) until well combined.
  5. In a baking dish, layer the pasta, then the meat sauce, and finally the béchamel on top.
  6. Bake at 180°C for 35–40 minutes, until golden and set.
  7. Allow to cool slightly before serving.
