Oven Miracle – Pastitsio with Fresh Milk Béchamel & Parmesan

Ingredients
- 500 g pastitsio pasta (long tubular pasta)
- 400 g ground beef
- 1 onion (finely chopped)
- 1 carrot (grated)
- 1 cup chopped tomatoes
- 1 tbsp tomato paste
- A pinch of cinnamon
- A pinch of nutmeg
- 1 tbsp basil
- 500 ml Charalambides Christis Fresh Milk Full Fat, 3% Fat
- 50 g Charalambides Christis margarine Original
- 100 g flour
- 100 g grated Parmesan cheese
- 1 egg (optional, for richer texture)
- Salt & pepper
Instructions
- In a large pan, sauté the ground beef with the grated carrot until browned.
- Add the chopped tomatoes, tomato paste, and spices/herbs. Simmer over low heat for about 25 minutes until the sauce thickens.
- Prepare the béchamel sauce: melt the margarine in a saucepan, add the flour, and whisk. Gradually pour in the milk, stirring constantly until smooth and thick.
- Stir in the Parmesan cheese (and the egg, if using) until well combined.
- In a baking dish, layer the pasta, then the meat sauce, and finally the béchamel on top.
- Bake at 180°C for 35–40 minutes, until golden and set.
- Allow to cool slightly before serving.
