Artichoke Green Peas Curry <3

Ingredients
- 1200g Barba Stathis Green Peas
- 750g Barba Stathis Artichokes
- 10 small carrots
- 4 tbsp. Olive oil
- 2 large onions (sliced)
- 5 small potatoes (washed and cut into quarters)
- 1 tsp. Ginger powder
- 1 tsp. turmeric
- 1 tsp. cumin
- 1 tbsp. Curry
- 1/2 cup tomato juice
- 500 ml Water
- Salt & plenty of pepper
Instructions
- Place a wide saucepan over medium heat, then add the olive oil and sauté the onions and ginger.
- Add the artichokes, potatoes and carrots. Continue sautéing for another 5 minutes while stirring. Stir in the cumin and curry.
- Then add the peas, turmeric and continue cooking. Keep stirring for another 5-6 minutes.
- Add the tomato juice and then the water. Add salt and pepper for taste, close the pot with its lid and leave for 10 minutes.
- Finally, open the lid and serve the food hot.
Tip: To enjoy it spicy, add ½ of a hot chili or hot paprika powder.
