Artichoke Green Peas Curry <3

Ingredients

  • 1200g Barba Stathis Green Peas
  • 750g Barba Stathis Artichokes
  • 10 small carrots
  • 4 tbsp. Olive oil
  • 2 large onions (sliced)
  • 5 small potatoes (washed and cut into quarters)
  • 1 tsp. Ginger powder
  • 1 tsp. turmeric
  • 1 tsp. cumin
  • 1 tbsp. Curry
  • 1/2 cup tomato juice
  • 500 ml Water
  • Salt & plenty of pepper

Instructions

  1. Place a wide saucepan over medium heat, then add the olive oil and sauté the onions and ginger.
  2. Add the artichokes, potatoes and carrots. Continue sautéing for another 5 minutes while stirring.  Stir in the cumin and curry.
  3. Then add the peas, turmeric and continue cooking. Keep stirring for another 5-6 minutes.
  4. Add the tomato juice and then the water. Add salt and pepper for taste, close the pot with its lid and leave for 10 minutes.
  5. Finally, open the lid and serve the food hot.

Tip: To enjoy it spicy, add ½ of a hot chili or hot paprika powder.
