Beans with Bacon

Barba Stathis Fresh Beans mix with bacon

Ingredients

750 g Barba Stathis Fresh Beans mix

● 200 g bacon, cut into strips or small cubes

● 1 medium onion, finely chopped

● 1 garlic clove, minced

● 1 carrot, diced

● 2–3 tablespoons olive oil

● 200 g crushed tomatoes (or ½ can chopped tomatoes)

● ½ teaspoon sweet paprika

● ½ teaspoon sugar

● ½ bunch fresh parsley, finely chopped

● 150 ml water or vegetable broth

● Salt and freshly ground black pepper, to taste

Instructions

  1. In a large non-stick skillet or wide saucepan, heat the olive oil over medium heat.
  2. Add the bacon and sauté until browned and crispy. Remove with a slotted spoon and set aside.
  3. In the same pan, add the chopped onion and sauté until softened, about 3–4 minutes.
  4. Stir in the garlic and diced carrot; cook for 1–2 more minutes until fragrant.
  5. Add the sweet paprika, sugar, and crushed tomatoes. Season with salt and pepper. Simmer for 10 minutes, stirring occasionally, until slightly thickened. Add a splash of water or broth if it reduces too much.
  6. Add the frozen beans directly to the pan (no need to rinse). Stir gently to coat with the sauce, then return the bacon to the pan.
  7. Let everything simmer for 10 minutes, until the beans are tender and the flavours are well combined.
  8. Taste and adjust seasoning if needed. Remove from heat and sprinkle with fresh parsley before serving.
