Barba Stathis Fresh Beans mix with bacon

Ingredients
750 g Barba Stathis Fresh Beans mix
● 200 g bacon, cut into strips or small cubes
● 1 medium onion, finely chopped
● 1 garlic clove, minced
● 1 carrot, diced
● 2–3 tablespoons olive oil
● 200 g crushed tomatoes (or ½ can chopped tomatoes)
● ½ teaspoon sweet paprika
● ½ teaspoon sugar
● ½ bunch fresh parsley, finely chopped
● 150 ml water or vegetable broth
● Salt and freshly ground black pepper, to taste
Instructions
- In a large non-stick skillet or wide saucepan, heat the olive oil over medium heat.
- Add the bacon and sauté until browned and crispy. Remove with a slotted spoon and set aside.
- In the same pan, add the chopped onion and sauté until softened, about 3–4 minutes.
- Stir in the garlic and diced carrot; cook for 1–2 more minutes until fragrant.
- Add the sweet paprika, sugar, and crushed tomatoes. Season with salt and pepper. Simmer for 10 minutes, stirring occasionally, until slightly thickened. Add a splash of water or broth if it reduces too much.
- Add the frozen beans directly to the pan (no need to rinse). Stir gently to coat with the sauce, then return the bacon to the pan.
- Let everything simmer for 10 minutes, until the beans are tender and the flavours are well combined.
- Taste and adjust seasoning if needed. Remove from heat and sprinkle with fresh parsley before serving.
