Chickpea Stew with Country-Style Sausage!

Ingredients
- 800 g Barba Stathis ‘’Let’s Cook’’ Chickpeas
- 4 Onions (finely chopped)
- 200 ml Olive Oil
- 8 Country-Style Sausages (cut into strips)
- ½ tsp Paprika
- 1-litre Vegetable Stock
- Juice of 2 Lemons
- ½ tbsp Cornstarch
- Salt & Pepper
Instructions
- In a small bowl, mix the lemon juice with the cornstarch until smooth. Set aside.
- In a large pot, add the chickpeas, onions, and olive oil. Season with salt and pepper, and stir to combine.
- Pour in the vegetable stock until it covers the chickpeas.
- Cover the pot with a lid and simmer over medium heat for about 55 minutes, stirring occasionally.
- When the chickpeas are tender, turn off the heat and stir in the lemon and cornstarch mixture.
- Cover the pot again to let the flavours meld.
- In a frying pan, heat a bit of olive oil over high heat. Add the sausages and sauté until golden brown.
- Towards the end, sprinkle in the paprika, stir, and remove from heat.
- Transfer the chickpea stew to a serving dish and top with the sautéed sausages. Serve warm.
Tip: If the stew becomes too thick, simply add a little cold water and stir well to achieve the desired consistency.
