High Protein Donuts with Straggato yoghurt 0% Charalambides Christis

Ingredients

  • 300 g Medjool dates, pitted
  • 270 g almond fillets
  • 5 g vanilla extract
  • 1 g almond extract
  • 200 g Straggato yoghurt 0% Charalambides Christis
  • 175 g chocolate protein powder
  • 120 g peanut butter
  • 100 g dark chocolate
  • 1 tsp coconut oil

For garnish:

  • Colored sprinkles

Instructions

  1. In a blender, combine the dates, almond fillets, vanilla and almond extracts, protein powder, and peanut butter. Blend until smooth and well incorporated.
  2. Transfer the mixture to a large bowl and mix in the yoghurt until fully combined.
  3. Lightly grease your hands. Take about 80 g of the mixture, roll it into a ball, then form a hole in the centre to shape it like a donut. Repeat with the rest of the mixture and place the donuts on a plate.
  4. Place the shaped donuts in the freezer for about 10 minutes to firm up.
  5. In a small saucepan or microwave, melt the dark chocolate with the coconut oil until smooth.
  6. Remove the donuts from the freezer and spoon melted chocolate over the tops. Immediately sprinkle with coloured decorations.
  7. Let the chocolate set for a few minutes and enjoy your protein-packed treat.
