High Protein Donuts with Straggato yoghurt 0% Charalambides Christis

Ingredients
- 300 g Medjool dates, pitted
- 270 g almond fillets
- 5 g vanilla extract
- 1 g almond extract
- 200 g Straggato yoghurt 0% Charalambides Christis
- 175 g chocolate protein powder
- 120 g peanut butter
- 100 g dark chocolate
- 1 tsp coconut oil
For garnish:
- Colored sprinkles
Instructions
- In a blender, combine the dates, almond fillets, vanilla and almond extracts, protein powder, and peanut butter. Blend until smooth and well incorporated.
- Transfer the mixture to a large bowl and mix in the yoghurt until fully combined.
- Lightly grease your hands. Take about 80 g of the mixture, roll it into a ball, then form a hole in the centre to shape it like a donut. Repeat with the rest of the mixture and place the donuts on a plate.
- Place the shaped donuts in the freezer for about 10 minutes to firm up.
- In a small saucepan or microwave, melt the dark chocolate with the coconut oil until smooth.
- Remove the donuts from the freezer and spoon melted chocolate over the tops. Immediately sprinkle with coloured decorations.
- Let the chocolate set for a few minutes and enjoy your protein-packed treat.
