Lemon yoghurt cake

Ingredients
- 4 Eggs
- 200 gr Sugar
- 200 ml Sunflower oil
- Straggato Yoghurt 2% Low fat Charalambides Christis 200 gr.
- Grated Lemon zest (1 lemon)
- ½ freshly squeezed Lemon
- 500 gr self-rising flour
- 2 sachets of Vanilla sugar
- 1 pinch of Salt
- Powdered sugar for sprinkling or Buttercream
Instructions
- In a mixer, beat the eggs and sugar with a whisk until fluffy. Then add the oil and yoghurt. Continue mixing.
- Add the lemon zest and the lemon juice to give it some flavour. Stir well. Then slowly add the flour and finally add the vanilla sugar and salt.
- Meanwhile, put the butter and the flour in a 26 cm cake pan and pour in the mixture, evenly.
- Finally, bake the cake for 50 minutes in a preheated oven, at 170 degrees on the heating elements and place on the lower grill of the oven.
