Lemon yoghurt cake

  •  4 Eggs
  •  200 gr Sugar
  •  200 ml Sunflower oil
  •  Straggato Yoghurt 2% Low fat Charalambides Christis 200 gr.
  •  Grated Lemon zest (1 lemon)
  •  ½ freshly squeezed Lemon
  •  500 gr self-rising flour
  •  2 sachets of Vanilla sugar
  •  1 pinch of Salt
  •  Powdered sugar for sprinkling or Buttercream


  1. In a mixer, beat the eggs and sugar with a whisk until fluffy. Then add the oil and yoghurt. Continue mixing.
  2. Add the lemon zest and the lemon juice to give it some flavour. Stir well. Then slowly add the flour and finally add the vanilla sugar and salt.
  3. Meanwhile, put the butter and the flour in a 26 cm cake pan and pour in the mixture, evenly.
  4. Finally, bake the cake for 50 minutes in a preheated oven, at 170 degrees on the heating elements and place on the lower grill of the oven.
