Minced Beef with Yoghurt!

Ingredients
- 4 Arabic flatbreads
- 5 tbsp of olive oil
- 1 kg minced beef
- 2 red onions, chopped
- 2 cloves garlic, grated
- 1 tsp cumin
- 500 g. tomatoes, grated
- 1 pinch sugar
- ½ bunch fresh mint, chopped
- ½ bunch parsley, chopped
- 1 kg Pissourkotiko Organic Sheep Yoghurt Charalambides Christis
- A little Paprika for serving
- Salt and pepper
Instructions
- In a large, deep pan, heat the olive oil over medium-high heat. Add the minced beef and cook until browned and all liquid has evaporated.
- Add the chopped onion and then the garlic to the pan. Season with salt and pepper. Cook for about 5 minutes, stirring occasionally.
- Add the cumin and stir well, followed by the grated tomatoes and a pinch of sugar. Mix thoroughly and let the mixture simmer for 15 minutes until the tomatoes are incorporated and the meat is tender.
- Just before removing from heat, stir in the chopped mint and parsley, mixing well.
- Preheat the oven to 200°C (air setting). Place the Arabic flatbreads on a baking tray and bake for about 10 minutes or until golden and crispy. Once cooled slightly, break the bread into large pieces.
- Arrange the broken flatbread pieces on a serving platter. Spoon the minced meat mixture over the top.
- Using a pastry bag (or spoon), add dollops of yoghurt on top of the minced meat. Sprinkle with paprika and serve warm or cold, as desired.
