Poached Eggs with Halloumi, Yoghurt, and Koulouri (Sesame Bread Ring)

Ingredients

1 koulouri (Greek sesame bread ring)

3 tbsp Charalambides Christis yoghurt

5 slices Charalambides Christis halloumi

1 tbsp Charalambides Christis margarine

2 eggs
-
4 tbsp vinegar
-
Salt
-
Pepper
-
Chives
-
1 tsp sweet chilli sauce
Instructions
Bring plenty of water to a boil in a saucepan and add the vinegar. Reduce the heat and keep the water just below boiling point.
Crack the eggs one at a time into the water and poach for about 3 to 4 minutes.
Remove the eggs and place them on absorbent paper to drain.
Sauté the halloumi slices in a pan until golden.
Cut the koulouri in half, spread with margarine, and toast in the pan until golden.
Place the koulouri on a plate, fill the hole in the middle with yoghurt, layer the halloumi on top, add the poached eggs, season with salt and pepper, garnish with finely chopped chives, and add sweet chilli sauce on top.
