Delicious Pumpkin soup with Charalambides Christis Fresh Milk.

Ingredients

  • 800g pumpkin
  • Charalambides Christis Fresh Milk Light, 1,5%, 1 ltr.
  • 2 bay leaves
  • Salt
  • Pepper
  • 3 slices bacon
  • 100 g. Straggato Yoghurt (2% fat) Charalambides Christis
  • 2 tsps. chives
  • Breadsticks to serve

Instructions

  1. Cut the pumpkin into cubes of equal size.
  2. Add the pumpkin into a pot with the milk, bay leaves, salt, and pepper.
  3. Boil over medium heat for 30 minutes or until pumpkin is tender.
  4. Remove the bay leaf and beat in a blender at high speed, until the ingredients are mashed.
  5. Fry the bacon in a non-stick frying pan until crispy. Finely chop and keep it for serving on top of the soup.
  6. In a small bowl, mix the yoghurt with the chives.
  7. Serve the soup in a bowl, add the crispy bacon on top, and finally the yoghurt.
  8. Garnish with breadsticks of your choice.
