Ingredients
- Barba Stathis Beans Barba Stathis Beans (Peeled Beans)750 g
- 1 bunch of thin Celery, finely chopped
- 1 Carrot, cut into cubes
- 2 Peppers, 1 red & 1 green, cut into cubes
- 4 fresh Onions, finely chopped
- 1 Avocado, coarsely chopped
- 1 tablespoon of capers, coarsely chopped
- 1/2 a cup of Cherry tomatoes, cut in half
- 1 teaspoon of dried Coriander, ground
- One cup of fresh Parsley, finely chopped, set aside for garnish
- 50ml Extra Virgin Olive Oil, plus more for serving
- 30ml Lemon Juice, plus more for serving
- 1 teaspoon of Sea Salt
- ½ teaspoon freshly ground Black Pepper
Instructions
1. Place a large pot on high heat filled with water. Bring to a boil and add the frozen beans. Let it boil well and then reduce to low heat. Simmer on low heat with the lid open for 30 '. At 15 'add the celery and carrots to the pot, add the dried coriander and season with salt and pepper while continuing cooking. Remove from the heat and drain.
2. Meanwhile, place a frying pan over medium heat and add half the oil. Let it heat for about a minute and add the peppers together with the cherry tomatoes and sauté until soft while stirring lightly. Remove from the heat and set aside.
3. Then, get back to the drained beans with the vegetables, place them in a large bowl and add the cooked peppers with the cherry tomatoes. Put the onions together with the parsley, pour the rest of the oil together with the lemon juice and mix.
4. Finally, add the capers together with the avocado and mix gently. Season with salt and pepper, if necessary, and serve in separate dishes while adding a little more olive oil and lemon juice, along with bread, olives, peppers, and anchovies.
5. Finally, add a little bit of parsley for garnish.
