  • 2 loaves of Italian Ciabatta bread (cut in half)
  • 2 tablespoons olive oil
  • 2 large traditional sausages
  • 4 tablespoons of grated tomato
  • 10 tomatoes (cut in half)
  • ½ a cup of Charalambides Christis Kefalotyri (grated)
  • 1 Pissourkotiko Traditional Halloumi Charalambides Christis
  • ½ onion (finely chopped)
  • 1 pinch of sugar
  • Plenty of chopped mint
