Chicken drumsticks with Barba Stathis corn salad.

Ingredients
- 4 chicken legs (drumsticks)
- 3 tablespoons of olive oil
- 2 red onions (sliced)
- ½ cup lemon juice
- 1 tablespoon of flour
- 1 cup of Water
- 1 package of Barba Stathis Corn Salad
- 3 stalks celery (sliced)
- Salt & pepper
Instructions
- In a large deep-frying pan, heat the olive oil over medium-high heat. Add the chicken drumsticks and cook until they are well browned. Season with salt and pepper.
- Add the sliced onions and sauté until they are soft. Then, add the lemon juice and cook for 2 minutes.
- Sprinkle the flour over the mixture, stirring well, and gradually add the water, continuing to mix until well combined.
- Remove the chicken drumsticks from the pan and set aside.
- Add the corn salad and sliced celery to the pan, mixing well. Cook for 5 minutes over medium heat.
- Transfer the corn mixture to a baking dish or Pyrex baking dish, placing the chicken drumsticks on top.
- Cover with aluminium foil and bake in a preheated oven at 200°C (400°F) with the fan setting for 35-40 minutes.
- Remove from the oven and serve hot with a spread of your choice on the side.
