Chicken Drumsticks with Corn | Charalambides Christis

Chicken drumsticks with Barba Stathis corn salad.

Ingredients

  • 4 chicken legs (drumsticks)
  • 3 tablespoons of olive oil
  • 2 red onions (sliced)
  • ½ cup lemon juice
  • 1 tablespoon of flour
  • 1 cup of Water
  • 1 package of Barba Stathis Corn Salad
  • 3 stalks celery (sliced)
  • Salt & pepper

Instructions

  1. In a large deep-frying pan, heat the olive oil over medium-high heat. Add the chicken drumsticks and cook until they are well browned. Season with salt and pepper.
  2. Add the sliced onions and sauté until they are soft. Then, add the lemon juice and cook for 2 minutes.
  3. Sprinkle the flour over the mixture, stirring well, and gradually add the water, continuing to mix until well combined.
  4. Remove the chicken drumsticks from the pan and set aside.
  5. Add the corn salad and sliced celery to the pan, mixing well. Cook for 5 minutes over medium heat.
  6. Transfer the corn mixture to a baking dish or Pyrex baking dish, placing the chicken drumsticks on top.
  7. Cover with aluminium foil and bake in a preheated oven at 200°C (400°F) with the fan setting for 35-40 minutes.
  8. Remove from the oven and serve hot with a spread of your choice on the side.
