Coconut Cake with Charalambides Christis Yoghurt

Ingredients

200 g Charalambides Christis Yoghurt (of your choice)

200 g shredded coconut

4 eggs

1 tbsp vanilla extract

For garnish:

White chocolate

Raspberries

Instructions

In a medium bowl, mix the yoghurt, shredded coconut, eggs, and vanilla.

Transfer the mixture to a small, lightly greased loaf pan. Bake in a preheated oven at 180°C for 15–18 minutes.

Remove from the pan.

Melt the white chocolate and pour it over the cake.

Garnish with raspberries and enjoy.
