Ingredients

  • ¼  L.Charalambides Christis Fresh Milk  Light
  • ¼ L. Charalambides Christis Dairy Cream  
  • 120g. Sugar
  • 1 teaspoon of Vanilla extract
  • 4 egg yolks
  • 1 pinch of salt
  • A little granulated sugar for the topping 

Instructions

  1. In a saucepan, combine the milk with half the sugar, the dairy cream and the vanilla extract. Cook until it begins to simmer.
  2. Once the cream begins to simmer, remove it from the heat, place it on the kitchen counter and let it cool down.
  3. In a bowl, mix the other half of the sugar with the egg yolks using a whisk.
  4. Slowly add the mixture to the egg yolk mixture and stir well.
  5. Place the mixture in ramekin bowls and bake at 150 degrees on the heating elements option, in a bain-marie for 40 minutes or at 110 degrees in the fan option without a bain-marie for 1 hour.
  6. Finally, when they cool down, sprinkle them with the granulated sugar and heat the sugar with a torch, giving an even colour to your cream.
