Ingredients
- 125 g. Charalambides Christis margarine Original (half a box)
- 170 g. dark chocolate (reserve 70 g in pieces)
- 170 g. sugar
- 3 medium eggs
- 1 tsp baking powder
- 1 vanilla stick (or 1 tsp vanilla extract)
- 60 g. all-purpose flour
- 30 g. cocoa powder
- A pinch of salt
For the Decoration:
- Fresh berries and figs
- Milk chocolate Anglaise sauce (or melted milk chocolate)
Instructions
- Preheat the oven to 175°C (347°F). Grease and line a brownie pan with parchment paper.
- Heat the margarine and 100 dark chocolate in the microwave, or melt in a bain-marie (double boiler) over medium heat until smooth.
- In a separate bowl, whisk together the eggs, sugar, and vanilla until well combined.
- Sift the flour, baking powder, cocoa powder, and a pinch of salt. Slowly fold the dry ingredients into the wet mixture, stirring until just combined. Add the reserved 70 grams of dark chocolate pieces into the batter.
- Pour the mixture into the prepared baking pan. Bake in the preheated oven for 35 minutes. Check for doneness by inserting a toothpick into the centre—there should still be some moisture to ensure the brownie stays soft. Note: The brownies will firm up further as they cool.
- Let the brownies cool completely before cutting them into square pieces. Garnish with fresh berries, figs, and drizzle with milk chocolate Anglaise sauce (or melted chocolate).
