Delicious brownie with melted chocolate and fresh berries!

Ingredients

  • 125 g. Charalambides Christis margarine Original (half a box)
  • 170 g. dark chocolate (reserve 70 g in pieces)
  • 170 g. sugar
  • 3 medium eggs
  • 1 tsp baking powder
  • 1 vanilla stick (or 1 tsp vanilla extract)
  • 60 g. all-purpose flour
  • 30 g. cocoa powder
  • A pinch of salt

For the Decoration:

  • Fresh berries and figs
  • Milk chocolate Anglaise sauce (or melted milk chocolate)

 

Instructions

  1. Preheat the oven to 175°C (347°F). Grease and line a brownie pan with parchment paper.
  2. Heat the margarine and 100 dark chocolate in the microwave, or melt in a bain-marie (double boiler) over medium heat until smooth.
  3. In a separate bowl, whisk together the eggs, sugar, and vanilla until well combined.
  4. Sift the flour, baking powder, cocoa powder, and a pinch of salt. Slowly fold the dry ingredients into the wet mixture, stirring until just combined. Add the reserved 70 grams of dark chocolate pieces into the batter.
  5. Pour the mixture into the prepared baking pan. Bake in the preheated oven for 35 minutes. Check for doneness by inserting a toothpick into the centre—there should still be some moisture to ensure the brownie stays soft. Note: The brownies will firm up further as they cool.
  6. Let the brownies cool completely before cutting them into square pieces. Garnish with fresh berries, figs, and drizzle with milk chocolate Anglaise sauce (or melted chocolate).
