Flaouna Recipe with Halloumi | Charalambides Christis

At Easter, every home in Cyprus has flaounes on the Easter table. They are either homemade or bought from a confectionary or a bakery shop. Below you can see my recipe on how to make flaounes easily without causing you any inconvenience. Having patience and carefully following the recipe you will certainly make your flaounes and your house will be filled with their pleasant smell.

Ingredients

  • 450 gr. flour
  • 10 gr. yeast
  • 270 ml warm milk
  • 1 teaspoon salt
  • ½ a teaspoon of mahlab (aromatic spice)
  • 1/2 a teaspoon of mastich
  • 1/2 a teaspoon of grounded anice in a mortar
  • 35 ml oil
  • 4 eggs
  • 300 gr of grated cheese for flaounes (use the side with the largest shredding holes of the grater)
  • 300 gr. Halloumi Charalambides Christis grated (use the side with large shredding holes of the grater)
  • 40 gr. semolina
  • ½ a teaspoon of ground mastic
  • ½ a teaspoon of mahlab (aromatic spice)
  • ½ a teaspoon of baking powder
  • 1 tablespoon of chopped fresh mint
  • 40 gr. raisins(optional)
  • 1 whisked egg (for the glazing)
  • Sesame seeds (for the glazing)

Instructions

  1. First, we make the dough. Pour all the ingredients into the bucket of the mixer and beat until combined. Transfer the dough to a bowl and cover with cling film. Allow the mixture to rise and expand for about 40 minutes.
  2. Meanwhile, we start preparing the filling. In another large bowl, beat the eggs and add the remaining ingredients. Stir and leave for 30 minutes.
  3. Lay some greaseproof paper over the kitchen counter. Divide the dough into 6 equal dough balls. Open each piece in a round sheet. We can do this with a medium bowl using its spout to form the round shape for the dough.
  4. Place the sesame seeds over the outer side of each piece of the dough, add 3 to 4 spoons of the filling in the centre of the dough and fold the dough pinching the corners to form the flaouna into a square shape.
  5. Place the flaounes on a baking tray lined with greaseproof paper. Cover them and let them rise for 1 hour. Glaze the outer side with the whisked egg and sprinkle with sesame seeds. Bake them in a preheated oven at 200 ºC for 45 minutes to 1 hour or until they rise well and are golden brown.
