Ingredients

For the Homemade Buttermilk:

  • 300 ml Charalambides Christis Fresh Milk Full Fat, 3% fat, at room temperature
  • 30 ml lemon juice

For the Chicken:

  • 400 g chicken wings
  • 150 g all-purpose flour
  • 40 g cornstarch
  • 1 tsp hot paprika
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • Salt/Pepper

Instructions

  1. Begin the recipe by making the homemade buttermilk.
  2. Add the milk and lemon juice to a bowl and stir lightly with a spoon.
  3. Set aside for 10 minutes until the buttermilk forms.
  4. While waiting for the buttermilk, season the chicken wings, which should be at room temperature, with salt and pepper.
  5. Prepare the breading mixture by combining all the breading ingredients in a bowl.
  6. After 10 minutes, once the buttermilk is ready, add the chicken wings to marinate in the refrigerator overnight.
  7. Remove the wings from the buttermilk, dredge them in the breading mixture, and fry over medium heat for 10-15 minutes until fully cooked.
  8. Serve with straggato (strained) yoghurt or a yoghurt dip.
