Garlic Bread with Charalambides Christis margarine original and cherry tomato salad!

Ingredients
For the Garlic Butter:
- 1 bulb garlic
- 1 tablespoon olive oil
- 250 g. Charalambides Christis margarine Original, at room temperature
- 2 tablespoons fresh parsley, chopped
- 50 g grated parmesan cheese, plus extra for topping
- Salt and pepper
For the salad:
- Cherry tomatoes
- Arugula
- 1 small baguette
- Lemon zest
Instructions
- Preheat the oven to 200°C (400°F). (Skip this step if using an air fryer.)
- Drizzle the garlic bulb with olive oil and sprinkle with sea salt.
- Wrap the garlic bulb in aluminium foil and roast in the oven for 30-40 minutes. Let the garlic cool slightly.
- In a bowl, combine the margarine, parsley, olive oil, parmesan, and a generous pinch of salt and pepper. Mash everything together with a fork.
- Remove the roasted garlic cloves from the bulb, mash about 3 cloves, and mix them into the margarine. Store the remaining garlic in the refrigerator covered in olive oil for another recipe.
- Slice the baguette lengthwise, toast it slightly, then spread a generous amount of garlic margarine on top. Toast for an additional 2 minutes, or until golden brown. Top with cherry tomatoes and arugula, and drizzle with a little olive oil. Enjoy!
