Healthy Bougatsakia (Mini Custard Pastry Rolls) with Charalambides Cristis Milk
Ingredients
For the cream:
250 g milk (Charalambides Christis)
40 g honey
40 g fine semolina
1 sachet vanilla
Zest of 1/2 lemon
For the wrappers:
3 eggs
4 rice paper sheets
1 tsp cinnamon
For garnish:
Powdered sugar
Strawberries
Instructions
For the cream: In a pan, add the milk, semolina, honey, and vanilla.
Cook over medium heat until the cream thickens. Remove from heat and add the lemon zest.
Beat the eggs in a bowl and transfer them to a large plate. Dip the rice paper sheets one by one into the egg, then place on a clean work surface. Use two sheets for each bougatsaki, overlapping them slightly in the middle.
Add 2 tbsp cream, sprinkle with cinnamon, and roll like a spring roll.
Cook in the air fryer at 180°C for 12 minutes.
Transfer to a plate, sprinkle with powdered sugar, and garnish with strawberries.
