Ingredients
- 350g. of spinach
- 1 pc fresh onion
- 100g. feta cheese
- 50g. cream cheese
- 1 sp parsley
- Zest from a lemon
- 1 egg
- 170g. leek
- 2 sp Olive oil
- 5-6 basil leaves
- Salt
- Pepper
MINI PIES
- 2 sheets of Chrysi Zymi Country Style Pastry
- Olive oil
SOUR CREAM
- 200g. Charalambides Christis Dairy Cream
- Juice of 1 lemon
- Salt
- Pepper
Instructions
- Cut the leek and cook it in a pan with 2 spoons of olive oil and a little salt.
- When it softens, put it in a bowl with the fresh onion, parsley, and basil, and cut it into small pieces.
- Cook the spinach for a bit until it is wilted and add it to the bowl with the rest and mix well.
- Put them in a colander and press them to remove the excess liquid and place them in a bowl with the cream cheese, feta cheese, egg, lemon juice, salt and pepper.
- Mix well and refrigerate for 30 minutes for the stuffing to firm up.
- Take 2 country-style pastry sheets of “Chrysi Zymi”, place one on top of the other, and cut them in half.
- Brush the divided sheets one by one with the remaining juice from the cooked vegetables.
- Put 1 spoonful of stuffing and roll up the pastry sheet to create small triangles.
- Put them in the oven at 180C for 30 minutes.
Sauce: Mix the dairy cream well with the salt and pepper.
