Spinach pie with traditional foil and the best margarine!

Ingredients
For the filling:
- 3 spoons of original margarine Charalambides Christis
- 1 kilo of fresh spinach (well washed and cut into large pieces)
- 2 leeks (cut into slices)
- ½ bunch of Dill (coarsely chopped)
- 1 bunch of Parsley (chopped)
- 1 large Onion (chopped)
- 230 gr. Charalambides Christis Feta
- ½ teaspoon Curry
- 2 large Eggs
- Salt & Pepper
For the dough:
- 180g. Original Margarine, Charalambides Christis (melted)
- 240 ml of Water
- 1 pinch of Salt
- 1 teaspoon of Baking Powder
- 550g. all-purpose flour
- 2 large Eggs
- A little Sesame
Instructions
For the filling:
- Melt the margarine in a large saucepan and then lightly saute all the vegetables with the herbs. Season with salt and pepper.
- Transfer the mixture to a bowl and let it cool. Then add the feta, the curry, and the eggs and mix well. Set aside and start preparing the dough.
For the dough:
- In a large bowl, pour the melted margarine, water, salt, and baking powder and mix with a wooden spoon. Then gradually add the flour until it becomes a dough that can be shaped, without sticking to your hands.
- Cover it with cling film and let it rest for 15 minutes.
- Then take it with your hands and shape it into a big stick. You divide it into two parts, one larger than the other. Roll out on a well-floured surface using a rolling pin.
- Transfer the large phyllo dough to a round pie pan, after first flouring it (it should be a little wider than the pan you are baking your pie in). Cut the extra overhanging dough with a knife.
- Then pour the filling on top of the phyllo dough in the pan and flatten its surface.
- Add the second small phyllo dough to the surface of the pie and roll up the edges, twisting with your fingers and pressing inward.
- Then brush the phyllo dough with the egg and sprinkle with sesame seeds.
- Finally, bake in a preheated oven at 180 degrees in the air setting for 35-45 minutes.
