Potatoes with Eggs and Charalambides Christis Feta Sauce

Ingredients
- 3 medium potatoes
- Oil for frying
- 100 g Charalambides Christis Feta
- 4 tbsp Straggato Yoghurt 0% Fat Free Charalambides Christis
- 1 tsp oregano
- 2 sprigs fresh thyme
- 2 tbsp Charalambides Christis Dairy Cream with 35% Fat
- 1 egg
- 1 tsp olive oil
- 1 tsp finely chopped chives
- Salt
- Pepper
Instructions
- Peel the potatoes and grate them.
- Rinse them very well and transfer to paper towels. Press to remove all excess water.
- Heat the oil and fry the potatoes until golden brown. Transfer to paper towels and lightly salt.
- In a non-stick pan, add 1 tsp olive oil and fry an egg sunny-side up. The yolk should remain runny.
- For the feta sauce, blend the feta, yoghurt, cream, thyme, and oregano until smooth.
- On your plate, place the potatoes first, then the egg on top. Add the feta sauce, salt, pepper, and chives — and enjoy!
