Hot salad with Barba Stathis beands, grated Kefalotyri Charalambidies Christis, bacon, roasted sesame and mustard vinaigrette!

Ingredients
For the salad
- 1 package Barba Stathis Beans
- 3 tablespoons Olive Oil
- 150g. Bacon (sliced)
- 100g. grate Kefalotyri Charalambidis Christis
- Slightly roasted sesame black and white
- Salt & Pepper
For Vinaigrette
- 1 tablespoon Mustard
- 1 tablespoon Mayonnaise
- 1 tablespoon Honey
- 50 ml Vinegar (from white wine)
- 100 ml Olive oil
- 200 ml Sunflower oil
- Salt & Pepper
Instructions
For Vinaigrette
- In a bowl put the mustard, honey, mayonnaise, vinegar, salt, pepper and mix with a whisk.
- While stirring, slowly add the olive oil and then the sunflower oil.
- If the vinaigrette thickens too much, dilute it with a little water.
For the hot salad
- Boil the beans according to the instructions on the package. When they are ready, drain them and cool them with plenty of cold water and keep them aside.
- In a non-stick pan, put the bacon on low heat until crispy. When it is ready, transfer it to absorbent paper and keep it aside.
- Transfer the pan to the heat and pour in the olive oil. Turn up the heat and lightly sauté the beans, and season with salt and pepper.
- Transfer the beans to a plate, pour the crispy bacon and the zest from the kefalotyri on top.
- Finally, add the vinaigrette and the roasted sesame, then serve.
