Baked Bouyiourdi with Feta Charalambides Christis (Spicy Feta and Tomato Bake)
Ingredients
1 green pepper
5 tbsp olive oil
1/2 chili pepper
3 tomatoes
1 block feta cheese (Charalambides Christis)
1 tsp smoked paprika
1 tbsp oregano
1/2 tsp black pepper
3 slices Gouda (Charalambides Christis)
For serving:
1 koulouri (sesame bread ring)
1 hot chili pepper
Instructions
Slice the green pepper, cut the chili into small slices, and dice the tomatoes.
Add 3 tbsp olive oil to the bottom of a small baking dish and add the peppers, chili, and 3/4 of the tomatoes.
Place the feta in the center and top with the remaining tomatoes.
Add the remaining olive oil, paprika, oregano, pepper, and the Gouda cut into cubes.
Cover with parchment paper and aluminum foil and bake in a preheated oven at 190°C for 18–20 minutes.
Remove the foil and parchment paper and bake for another 3 minutes.
Mix gently to combine all ingredients and serve with koulouri and a hot chili pepper.
