Cheese croquettes with Charalambides Christis Kefalotyri

Ingredients
- 300g Charalambides Christis Kefalotyri (grated)
- 70g all purposes flour
- 1 egg
- 100g toasted bread
- 1 teaspoon dry mint
- Sunflower oil for frying
Instructions
- In a bowl, mix the kefalotyri well with the flour, egg, mint and toasted bread.
- Then take a large spoonful of the mixture and shape it into balls roughly the size of a walnut.
- When you have prepared all the cheese croquettes, transfer them to a tray and put them in the freezer for 5 hours to tighten well.
- Then heat up the sunflower oil in a deep pan over high heat.
- When the sunflower oil is well heated, lower it to medium heat.
- Fry the cheese croquettes in portions, until well browned.
- Transfer the cheese croquettes with a slotted spoon to a plate lined with paper towels before serving.
