Savoury ‘’Galatopita’’ (Greek milk pie) with spinach salad, with Charalambides Christis fresh milk & feta.

Ingredients
For the Milk Pie (Galatopita)
- 1 litre Charalambides Christis Fresh Milk Full Fat, 3% Fat
- 400 g. Charalambides Christis Feta
- 4 eggs
- 150 g. all-purpose flour
- A little toasted sesame
- Salt & Pepper
For the Spinach Salad
- 500 g. spinach (the leaves only)
- 2 fresh onions (finely chopped)
- 3 beetroots (boiled and sliced)
- 2 spoons of olive oil
- 1 spoonful of balsamic vinegar
- Salt & Pepper
Instructions
For the Milk Pie (Galatopita)
- Preheat the oven to 180 degrees on the resistance setting.
- In a saucepan, add the milk and flour. Mix well with a whisk until smooth.
- In a separate bowl, beat the eggs well and set aside.
- Place the saucepan on the heat and continue to stir until the mixture thickens and bubbles.
- Remove the saucepan from the heat. Add the beaten eggs, and feta cheese, mixing very well.
- Season with salt and pepper.
- Pour the mixture into a buttered and well-floured pan (about 26 cm).
- Sprinkle with sesame seeds and transfer to the oven.
- Bake for about 45 minutes or until the pie is set and golden brown.
- When ready, set aside to cool slightly before serving.
For the Spinach Salad
- In a large bowl, combine all the ingredients and mix very well.
- Serve the milk pie in pieces and put the spinach salad on top.
Tip: This recipe is very nutritious and makes a perfect and filling breakfast for you and your friends. Enhance the flavour with ginger or paprika.
