Delicious Tomato-Basil Risotto with Kefalotyri!

Ingredients
- 120 g. Olive oil
- 150 g. Onion (finely chopped)
- 400 g. Arborio rice
- 200 g. White wine
- 1,200 ml Vegetable stock
- 400 g. Tomato sauce (of your choice)
- 50 g. Charalambides Christis Kefalotyri (grated)
- 60 g. Butter
- 30 g. fresh basil (finely chopped)
- Salt & Pepper
Instructions
- Heat a saucepan over medium-high heat. Add the olive oil and sauté the onion pieces until they soften well.
- Add the rice and sauté for about 2-3 minutes. Deglaze with wine and let it be absorbed completely.
- Add the hot broth in small portions, stirring constantly and waiting for all the liquid to be absorbed before pouring again.
- Season with salt and pepper and add the tomato sauce. Continue until it reaches the desired consistency.
- Finally, remove the saucepan from the heat and add the cold butter, kefalotyri and basil. Mix well and serve.
