Delicious Tomato-Basil Risotto with Kefalotyri!

Ingredients

  • 120 g. Olive oil
  • 150 g. Onion (finely chopped)
  • 400 g. Arborio rice
  • 200 g. White wine
  • 1,200 ml Vegetable stock
  • 400 g. Tomato sauce (of your choice)
  • 50 g. Charalambides Christis Kefalotyri (grated)
  • 60 g. Butter
  • 30 g. fresh basil (finely chopped)
  • Salt & Pepper

Instructions

  1. Heat a saucepan over medium-high heat. Add the olive oil and sauté the onion pieces until they soften well.
  2. Add the rice and sauté for about 2-3 minutes. Deglaze with wine and let it be absorbed completely.
  3. Add the hot broth in small portions, stirring constantly and waiting for all the liquid to be absorbed before pouring again.
  4. Season with salt and pepper and add the tomato sauce. Continue until it reaches the desired consistency.
  5. Finally, remove the saucepan from the heat and add the cold butter, kefalotyri and basil. Mix well and serve.
