Nachos with Charalambides Christis Sour Cream
Ingredients
• 4 tortillas
• 3 tbsp tomato sauce
• 3 slices Charalambides Christis Mozzarella, finely chopped
• 3 slices Charalambides Christis Gouda, finely chopped
• 1 tomato
• ½ onion
• 1 tbsp olive oil
• Juice of 1 lime
• Salt
• Pepper
• 1 tbsp guacamole
• 2 tbsp Charalambides Christis Sour Cream
For garnish:
• Fresh coriander leaves
Instructions
1. Cut the tortillas in half, then again and again to create small triangles.
2. Fry them over medium heat until golden brown. Transfer to paper towels to drain.
3. Place the tortilla chips on a baking tray, top with the tomato sauce and cheese, and bake in a preheated oven at 170 °C for 6–7 minutes.
4. Meanwhile, dice the tomato and onion into small cubes. Place in a bowl, add olive oil, lime juice, salt, and pepper, and mix well.
5. Serve the nachos on a plate. Add the sour cream in the centre, the tomato–onion mix on one side, and the guacamole on the other.
6. Garnish with coriander leaves and enjoy.
