Stuffed Tomatoes with Bulgur, with Charalambides Christis Feta and Kefalotyri!

Ingredients

  • 8 large Tomatoes (cut for stuffing)
  • 1 can of Tomatoes (grated)
  • 3 tablespoons Olive Oil
  • 1 onion (finely chopped)
  • 1 clove Garlic (mashed)
  • 200 g. Bulgur
  • ½ teaspoon Paprika
  • 1 pinch of Sugar
  • ½ fresh Mint (finely chopped)
  • 225 g. Charalambides Christis Kefalotyri (grated)
  • 100 g. Charalambides Christis Feta (crumbled)
  • Salt & Pepper

Instructions

  1. Preheat the oven to 200 degrees.
  2. In a pan over medium heat, heat the olive oil and sauté the onion and garlic until soft.
  3. Add the bulgur and stir.
  4. Add the grated tomato, salt, pepper, paprika, sugar and simmer for 15 minutes.
  5. Remove the food from the heat and add the feta cheese, mint and mix well. Then, add some of the filling in each tomato using a spoon and add the grated kefalotyri on top.
  6. Finally, bake the tomatoes in the preheated oven on the heating elements, on the middle grill, for 15 minutes.
